Strategy
To best combat an Adamantortoise the party will need to collapse it as quickly as they can.

To do this the party should focus on disabling one leg at a time. Stagger the leg with the Tri-Disaster Paradigm (RAV/RAV/RAV), raise the stagger percentage a bit, and then "destroy" it with Fang's or Snow's Full ATB Skill. Full ATB Skills ignore Protect and Deprotect and elemental affinities, so debuffing the legs is not needed, but Bravery (Attack Power +40%) or Bravera (Attack Power +80%) is useful to boost the damage dealing potential of Snow or Fang, making it easier to one-shot the legs.

The Adamantortoise will still continue to stomp with both its legs until the party has brought both legs down to 1 hit point, at which point the Adamantortoise will collapse. While it is collapsed the Adamantortoise is temporarily unable to take action. Once it has fallen over the party can aim to stagger its head and inflict as much damage as possible. The Adamantortoise will get back up after some time passes at which point the party will need to repeat the process of collapsing it and dealing as much damage as possible to its head while it is down. Repeat this process until the Adamantortoise is defeated.

The party can also collapse the Adamantortoise by summoning an Eidolon which will automatically collapse the Adamantortoise.

Adamantortoises are susceptible to Instant Death. The party can inflict this by selecting Vanille as its leader and using her Full ATB Skill the Death spell. To give Vanille some time to safely attempt the Death spell, the party will first want to collapse the Adamantortoise by disabling its legs by summoning Vanille's Eidolon. While it is down the party should have Vanille cast Death repeatedly until the spell succeeds in instantly killing the Adamantortoise.

Etymology
To increase the success rate of Vanille's instant Death spell succeeding the party should try casting more debuffs on the Adamantortoise while it is down. Adamantortoises become more susceptible to debuffs while they are collapsed. Useful debuffs include Imperil and Poison. In Final Fantasy XIII Poison is especially effective against opponents with high HP.

Buffing Vanille will also increase Death's chance of success and a buff like one of the En-group spells will also allow the Death spell to deal more damage when it doesn't succeed.
