VII and VIII are personal favorites for me. I've only seen gameplay of XV
FFVIII seems more useful. It actually has a functioning (sort of. It's more of a shrapnel shooting shotgun) gun on it.
FFXIII looks straight-up wacky.
As connfusing as it was for me, I still loved it.

I've never even heard about Steiner, whoever he is until now.
Basch, from what I've seen, looks more like a Chad than a big man.
Barret is a close second to Gladiolus. This is debatable, but maybe if Barret used a massive sword alike to Gladio's or Cloud's, he would probably get the top pick.

I might be taking this version of Bahamut too lightly, but I'm pretty sure he's from FFVII. I play the mobile game FFVII: First Soldier, and its second and current season is based around Bahamut. If I'm not mistaken, it's FFVII Remake's version.
The only one I've come across in any game is Bahamut, so there's that.
Quetzalcoatl (I literally just pronounced that for the first time, I was too lazy to before) is the only Summon/GF I've used out of the four, so it's kind of biased.
There's plenty of rewards for the both of us to get you started, so yeah.

I just play on console and most of the time mobile gets a bad rep.

I used to own FFVIII before my PS1 broke. I'm not even sure if this counts, but I play FFVII: The First Soldier now.
